A spot of easy baking: Cornflake Cakes and Victoria Sponge!

Hello all! Just wanted to share a spot of simple baking with you all today for puddings you can make easily and in a rush…

NOMMING…

VICTORIA SPONGE CAKE!

This is one of my favourite types of cakes and the best part is that it’s super easy to make!

All I did was cream together 250g caster sugar with 250g unsalted butter using my new super duper Breville mixer, which I’m very excited about! I then added 4 beaten eggs, one at a time to the mixture and finally folded in 250g self-raising flour.

Once this was all beautiful a mixed, I added 1 tsp vanilla extract, just to give the cake a little extra flavour and separated the mixture into two greased tins. I baked the cakes in a preheated 180 degree oven for roughly 30 minutes.

Once the cakes had cooked and cooled I put them together with whipping cream on one side and strawberry jam on the other, finishing off the cake with a sprinkling of icing sugar and a strawberry!

CORNFLAKE CAKES!

These are super easy to make even for the least skilled of bakers, so no excuses here people. Most of the online recipes are for children for goodness sakes!

All you need is 100g cornflakes, 100g chocolate, 50g butter and 3 tbsp golden syrup. You melt the butter, syrup and chocolate together over the cooker and then mix them gently into the cornflakes.

Pop them in individuals cake cases and into the fridge to set. Et viola! Easiest dessert of them all.
